I’m just learning about photography and I have a Canon PowerShot S5-IS Point & Shoot. I’ve been reading about f-stop and I can’t seem to figure out where on my camera to change it? I’m wondering if it isn’t called something else on the Canon Cameras?

You must be in full-manual (M) mode or in aperture-priority (Av) mode in order to change this value.
I don’t have an S5-IS; but from the screenshot I found through a search, it looks like the f-stop value appears under the shutter speed, in the bottom-right corner of the lcd screen, when framing a shot.
To be technical, f stop is the ratio between the diameter of the aperture and the focal length of the lens. The aperture is the amount of light that the lens allows into it. On most point an shoot cameras like the S5-IS its is adjustable.
What you are probably thinking of “F-stop” is actually the aperture size. On the canon, and most other cameras, you can manually set i when you shoot in aperture priority, or in full manual mode. When you rotate the dial on the top of your camera to “A” it is in aperture priority, Or “M” it is in manual. In those mode, you can used menus or adjustment buttons on your camera to set aperture. In manual mode, you also set the shutter speed
In “S” (Shutter priority) and “P” (Program) the aperture is set automatically.
There is not enough room here to discuss it fully but in a nutshell, photographers usually want to shoot with as small as aperture as possible. This gives you a greater depth of field (objects close to the lens and far from the lens are in focus) The lower the “f stop” generally the more depth of field you get.
I’ve referenced an article that explains this in more detail. Also consult the manual of your camera. If you don’t have the manual, you can usually download it from canon’s website.
I have to add that I don’t have a canon powershot, I have a nikon D90, but I also have a Canon AE-1.

The f-stop (or aperture) is known as Av (aperture value) on your camera.
Simply look up…’Aperture Value’ in the Index.
Also, if you want to set the shutter speed you can turn the mode dial to Tv (time value).
Selecting M (Manual) allows you to select your aperture AND shutter speed.
