I currently have a Canon Powershot S31S, and i am pretty set on purchasing the Nikon D60.
Although, i do have a concern of whether or not it is a big enough jump, if i will get “bored” of it too soon. I would like to grow with the camera and get more serious about photography in the near future.
In your opinion do you think the D60 will suffice, or should i go for a higher model?

Don’t be thrown away by words “entry level” many use to describe D60. It’s a full featured and complete dSLR with nothing missing, except the things that are needed by the big pro’s, who shoot events, sports and do photojournalism related work. They all have to do with convenience and speed, not with ability to do one or another kind of shot. So go for it with no doubt in your mind.
Just make sure you get a good lens, not third party, and one that you will want to keep for years to come. Because when D60 becomes old and obsolete (more likely with technology advance than because you’ll be grown out of it) – you will eventually want to upgrade to a new body, but will keep all your glass. And then next time, and again. So your bigger investment is a lens, not a body.

It is a huge jump, both in image quality and flexibility. When you move to a DSLR, it is no longer about the camera, but the lenses you buy and the skills you learn that you will use to produce fabulous photos. I still shoot with a Leica 35 mm camera. The only features it has is a couple of interchangeable lenses and the ability to adjust shutter speeds and apertures on the lens. That is it. Becoming bored is more of a function of getting “photographers” block and you can’t decide what subjects to shoot, what new lighting to play with or just how to motivate yourself to pick up your camera and start shooting.
I too own a S3IS before I chose the XSi because it has a better rating than the Nikon D80 and I’m familiar with its features and handling. If you can, I would choose the D90 coming out soon or the D80. The D80 goes for about $565 on Amazon right now from Adorama (reputable seller). Grab an excellent walkaround lens and you’re good to go.
The D80 will be the better option because it is affordable and if you want to seriously upgrade later.
